How to make Ringan nu shaak?
Instructions
- Chop eggplant, potato and tomato.
- Heat up the oil in a heavy bottomed pot on medium heat.
- Add whole dry red chilis.
- Add asafoetida, turmeric powder, red chili powder, Ginger, garlic, and green chili.
- Add tomato and cook till tender.
- When tomato is cooked, add eggplant and potato.

- In a heavy bottom non-stick large saucepan heat the oil over a low flame.
- Now add the dried chilli and ginger paste.
- Add the diced aubergine along with the cumin and coriander powder.
- Stir well and continue to cook over a low heat for 12-14 minutes with the lid on.
